Pancakes & Sundays, redux

redux: brought back; revived.

In that sense, this isn't truly "redux" because Pancake Sundays have continued since this post with fewer than 5 exceptions!


Nevertheless, the time has come to update the blog with the new.


Since I received sourdough instruction - and a great sourdough pancake recipe, I've been making our pancakes from scratch!


My recipe (adapted from someone else's) follows; mine is different enough that I have no compunction about calling it my own.


Sourdough Pancakes

1 and 1/3 heaping c of fed sourdough starter (I use the discard from my Sunday bread-baking for this. I mentioned the heaping part because if you've worked with fed sourdough starter, you know, it heaps!)

2 eggs

1-2 T of honey

1-2 T of sifted baking soda

1 c of blueberries

Coconut oil for skillet

Butter as desired

Pure Maple Syrup, Raw Honey, or Sorghum Syrup as desired

(For those 2, where I say "1-2"? That's because I never measure. My advice on using this recipe, is start at 1 1/2 T until you are eyeballing it like I do. The reason I say sifted baking soda is that I keep mine on the counter and it tends to get lumpy. I use a sifter to mash out the lumps before I mix it up.)


Directions:

  1. Mix the sourdough starter, the eggs and honey.

  2. Start the burner under your griddle or frying pan. Set to medium high.

  3. Add a scant T of Cocunut Oil to the pan to get hot. (Full disclosure, I don't abide by the scant directions here. I use a good 1+ T of Coconut Oil for each pancake. But that's just me.)

  4. Add the Baking Soda and stir. WAIT FOR IT. You'll enjoy watching pancake batter bubble in the mixing bowl!

  5. Pour about an 8 or 9 in pancake.

  6. Sprinkle in 1/4 c (a handful or 2) of blueberries on the uncooked top of the pancake. Poke the berries down in the batter by hand one-by-one. It's fun.

  7. Wait until you see a crust around the edges and the bubbles start to dry. But don't wait for the whole thing to dry!)

  8. Flip the pancake.

  9. It doesn't take long after you flip. 1 minute or so. I usually put my pancake turner underneath and peak at the bottom to make sure I like the color before I move the pancake to the first plate.

  10. I serve with butter softened in a butter bell and I warm up my maple syrup in the microwave and serve with bacon.


Yield:

4 pancakes PLUS a puppy pancake that I use to soak up the bacon grease. The 4 puppies (all adults but I call them puppies)... the 4 puppies in our pack LOVE Pancake Sunday!
